GF Peanut Butter Energy Bites

These GF peanut butter energy bites are great to have on hand when you want something quick and sweet! They also have some protein and fiber in them, so they will keep you feeling a little fuller a little longer. With simple ingredients, it's great to always have some in the freezer ready to go!

Ingredients
  

  • 1.5 tbsp vanilla protein powder
  • 1/2 cup rolled oats
  • 1 tbsp flax meal
  • 1/3 cup natural peanut butter
  • 3 1/2 tbsp maple syrup
  • 3 tbsp plant milk
  • 3-4 tbsp mini choc chips I prefer Enjoy Life
  • *** optional: splash of vanilla extract

Instructions
 

  • Mix everything together except the chocolate chips. When everything is well incorporated, fold in the chocolate chips.
  • Freeze mixture for 15 minutes. Then using a 1 tbsp measuring cup scoop out the mixture and roll into balls.
  • You can store these in the fridge or freezer in an airtight container. Enjoy!!

Notes

Note: You may need more peanut butter depending on your consistency of pb.
The freezing is optional here, but I find it makes the mixture easier to work with and roll into balls.
