GF Peanut Butter Energy Bites

GF Peanut Butter Energy Bites

These GF Peanut Butter Energy Bites are constantly on rotation in my house. I like to keep them in the freezer for a quick snack or an after meal treat! They are sweet, peanut buttery, and speckled with chocolate chips to also satisfy your sweet tooth! I love that they also pack a bit of protein in them to fill you up too!

This recipe is super versatile as well so feel free to switch things up as you see fit! You can add in some nuts or seeds, use a different type of nut butter, and possibly even use a different flavor of protein powder! It is super forgiving so don’t be afraid to experiment with it and have some fun!

Ingredients for the GF Peanut Butter Energy bites:

vanilla protein powder

Is it safe to eat raw oatmeal?

Yes, it is perfectly safe! I prefer the texture of rolled oats. They tend to soften up a bit as they sit. If you are not a fan of rolled oats, feel free to experiment at your own risk. I have not tested this recipe with any other type of oat/ four.

Best way to store energy balls?

I like to keep mine in the freezer so they keep for a long time. They hold up their shape well and when I’m ready to have one I set it out for about 10 minutes and allow it to soften.
You can also store these in an airtight container in the fridge for about 7 days. They keep very well!

Do I have to use protein powder?

No, you can make these without protein powder if you desire. You would just add a bit more oats to ensure that your energy balls are able to stick together and aren’t too soft or mushy.

Feel free to make these your own!

If you want to add in some nuts, sprinkles, chocolate chunks, pb chips, the possibilities are endless! Just make sure you keep a good ratio between liquid/ peanut butter to coarse ingredients so you maintain a good texture.

  • 1/3 cup natural peanut butter
  • 3 1/2 tbsp maple syrup
  • 3 tbsp plant milk

  • *** optional: splash of vanilla extract

  • Mix everything together except the chocolate chips. When everything is well incorporated, fold in the chocolate chips.
  • Freeze mixture for 15 minutes. Then using a 1 tbsp measuring cup scoop out the mixture and roll into balls.

Note: You may need more peanut butter depending on your consistency of pb.
The freezing is optional here, but I find it makes the mixture easier to work with and roll into balls.
